Garlic- does best when planted in the fall (October, November), harvesting in late spring. Garlic has a long growing season and does very well with no attention through the winter. A variety that does well in the Chesapeake Bay area is “Softneck”.

Spinach- Plant spinach seeds now and cover with Row Cover, which can be purchased at most garden or hardware stores. This provides you an early spring harvest of spinach leaves.

Carrots- do well planted in October & November generating sweeter carrots for harvet in the spring.

Beets- Beets do well through the winter but must be harvested before they flower in spring or they become bitter.
